Cinnamon Chocolate Chip Cookie

Ingredients

1. 8 ounces unsalted butter

2. 12 ounces bread flour

3. 1 teaspoon kosher salt

4. 1 teaspoon baking soda

5. 3.5 ounces granulated sugar

6. 8 ounces dark brown sugar

7. 1 large egg

8. 1 large egg yolk

9. 2 tablespoons milk

10. 1 1/2 teaspoons vanilla extract

11. 12 ounces Hershey's cinnamon chocolate chips

Instructions

1. Bake the butter in a 2-quart saucepan over low heat, then set aside to cool.

2. Sift together the flour, salt and baking soda onto a paper plate or bowl.

3. Whisk together the whole egg, egg yolk, milk and vanilla extract into a separate bowl.

4. Pour the butter into a mixing bowl (I use a stand mixer). Add the sugars and egg mixture and beat with the paddle attachment on medium to medium high until the mixture is light and airy.

5. Gradually integrate the dry ingredients with mixer on "stir", stopping a couple of times to scrape down the side of the bowl with a rubber spatula

6. Mix in chocolate chips while still on "stir"

7. Chill the dough for at least 2 hours.

8. Heat the oven to 375 degrees F and place the racks in the top third and bottom third of the oven.

9. Scoop medium-large cookie dough balls onto parchment covered cookie sheets.

10. Bake two sheets at a time, the on upper, one on lower rack, for 7 minutes. Swap upper and lower sheets and cook for an additional 7-8 minutes.

11. Remove from the oven and let cool for at least 10 minutes.
